Whole Grain Waffles

  • 2 eggs, beaten  –  69.6¢
  • 1 3/4 cups skim milk  –  37¢
  • 1/4 cup canola oil  –  11.4¢
  • 1/4 cup unsweetened applesauce  –  14.4¢
  • 1 teaspoon vanilla extract  –  36¢
  • 1/2 cup whole wheat flour  –  18.4¢
  • 1/2 cup flax seed meal  –  92.8¢
  • 1/4 cup wheat germ – 33.8¢
  • 3/4 cup all-purpose flour  –  13.8¢
  • 2 teaspoons baking powder  –  11.8¢
  • 1 tablespoon sugar  –  1.75¢
  • 1/4 teaspoon salt  –  0.2¢

Servings – 4

Directions:

  1. In a large bowl, wisk 2 eggs until beaten.  Add the milk, oil, applesauce, and vanilla.  Wisk
    thoroughly.
  2. In another bowl, combine all the dry ingredients and mix.  Add the dry ingredients to the wet ingredients and mix well.
  3. Heat your waffle iron to your desired setting.  When your iron is hot, brush with some canola oil or use cooking spray. Pour batter into your iron in batches, and cook until crisp and golden brown.
  4. Serve with some fresh berries, banana slices, or top with some maple syrup.

  • You can pre-mix the batter ahead of time and it will store in the fridge for up to a week.
  • You can freeze the waffles after they are done and reheat in a toaster oven.
